Apple Blueberry Bircher

A good bircher is hands down my favourite breakfast. Whether at home, or out and about in a local cafe, its very unlikely that I turn down this delicious mix of hearty goodness.

To make at home it's simple. It's a one bowl wonder.
Leave overnight in the fridge to soak and you can keep the mix for up to a week. Having said that. it never lasts that long in my house.

Preparation Time: 5-10 minutes
Cooking Time: 0 minutes
Makes: 6 servings

4 Cups Rolled Oats
2 Cups Natural Yoghurt
2 Cups Apple Juice
2 Apples Grated
1Tbs Honey
1Tsp Cinnamon
1 Cup Blueberries

In a large mixing bowl, pour in the oats, apple juice and yoghurt.

Grate the apples (no need to peel), and add to the mixture.
Stir with a wooden spoon until everything is combined.
Add the honey and cinnamon.
Stir and pour into a container or separate into individual jars.
Top with blueberries.

In the final stages you can add a variety of dried fruits, nuts or seeds. I find the simple recipe above is great for kids. For adults, try adding pistachios, macadamias, chia seeds and cranberries.

Agreed - you can never turn down a good bircher muesli! Great pictures!
