A healthier version of bread and butter pudding, with a few unexpected ingredients to enjoy.

Ingredients
900g apples
100g raisins
1 orange
55g butter
120g stale bread
1 egg
200ml ginger beer
200ml almond milk
½ tsp ground nutmeg
½ tsp ground cinnamon
½ tsp vanilla extract
1 tsp Truvia sweetener (or 25g sugar)
2 tbsp blackberry jam
120ml warm water
Method
Soak the raisins in warm water.
Core, peel, and slice the apples.
Put the apple in a saucepan with the sweetener/sugar, and ginger beer.
Zest and juice the orange, and add to the saucepan.
Cook for 25 minutes with the lid on, stirring occasionally until it is the consistency of apple sauce.
Take the apple sauce off the heat, and stir in the jam and drained raisins.
Butter the bread on both sides, toast it, and then put in a baking tray.
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Beat the egg with milk, vanilla extract, cinnamon, and nutmeg, and pour the mixture over the toast.
Pour the apple sauce over the top and bake in the oven for 45 minutes.
