Apple Charlotte Pudding
Charlottes are a type of eighteenth century English pudding named after Queen Charlotte. These fruit puddings can either be baked or unbaked, the later being similar to a summer fruit budding as it is encased in bread.
The most common charlotte pudding is an apple charlotte, and here is a recipes for the baked variety.
Preparation Time: 1 hour 45 minutes
Cooking Time: 30 minutes
Makes: 8 servings
Ingredients
3 baking apples
125g butter
½ tbsp Truvia sweetener (or 75g sugar)
250g wholemeal bread flour
¼ tsp salt
5g fast action yeast
125ml water
Method
Mix together the flour, salt, yeast, and water to form a dough.
Knead the dough for five minutes, then prove for about an hour.
Roll ¾ out the dough and use to line an oven proof pudding basin.
Peel, core, and chop apples.
Fry the apples in butter until a golden colour and allow to cool.
Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.
Pour the apples into the pudding basin.
Roll out the remaining dough and use it to cover the apples.
Bake in the oven for half an hour, then turn out of the basin.
