Apple Charlotte Pudding

Charlottes are a type of eighteenth century English pudding named after Queen Charlotte. These fruit puddings can either be baked or unbaked, the later being similar to a summer fruit budding as it is encased in bread.

The most common charlotte pudding is an apple charlotte, and here is a recipes for the baked variety.

Preparation Time: 1 hour 45 minutes
Cooking Time: 30 minutes
Makes: 8 servings

Ingredients
3 baking apples
125g butter
½ tbsp Truvia sweetener (or 75g sugar)
250g wholemeal bread flour
¼ tsp salt
5g fast action yeast
125ml water

Method



  • Mix together the flour, salt, yeast, and water to form a dough.



  • Knead the dough for five minutes, then prove for about an hour.



  • Roll ¾ out the dough and use to line an oven proof pudding basin.



  • Peel, core, and chop apples.



  • Fry the apples in butter until a golden colour and allow to cool.
  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.
  • Pour the apples into the pudding basin.



  • Roll out the remaining dough and use it to cover the apples.



  • Bake in the oven for half an hour, then turn out of the basin.
