Apple Cranberry Lemon Cobbler

This warm treat is perfect to try just before the holidays. A sweet assortment of fruit and pastry will be a hit, especially with the aid of ice cream.

Preparation Time: 25 minutes
Cooking Time: 45 minutes
Makes: 8-10 servings

Ingredients
Crust
1 1/2 cup flour
1/2 cup crisco shortening
4 tbsp cold water
pinch of salt

Filling
4 cups apples (sliced & peeled)
1 1/4 cup cranberries
1 tbsp lemon juice
1/2 cup white sugar
1 tbsp flour
1/2 tsp cinnamon
pinch of nutmeg
pinch of salt

Method
  • Mix flour and shortening together in a bowl.
  • Add water and salt to the mixture, and mix together.
  • Using your hands, ball the dough together, and set it aside.
  • Peel and slice four apples, and set them aside.
  • In a bowl, mix white sugar, cinnamon, flour, nutmeg, and salt. Pour the apples into this mix.

  • Add cranberries, and lemon juice to the same bowl containing the coated apples, and mix them together to make the filling.

  • Pour and spread the filling into a baking pan, and set it aside
  • Sprinkle flour on countertop or flat surface and retrieve the dough from earlier.
  • Place the ball of dough on the flour, and using a rolling pin, flatten the dough into a crust.
  • Roll the crust onto the rolling pin, and gently lay the crust overtop of the filling in the baking pan. 

  • Bake at 204 degrees for 45 minutes. 

  • (Optional, add ice cream).
