Apple Ricotta Pancakes
Naturally sweet and naturally delicious!

Serves: 3
Ingredients
3 apples
125 g ricotta
100 g plain white flour
45 g pine nuts
2 tsp ground cinnamon
1 tsp coconut oil
1 tbsp honey
100 ml water
125 ml almond milk
1 egg
Method
Core and chop the apples.
Simmer in a saucepan with water, stirring occasionally until the apples turn to a chunky pulp.
Beat together the egg, milk, flour, and 1 tsp cinnamon.
Melt the coconut oil in a frying pan, and then pour 1/3 of the mixture into the pan.
Quickly tilt the pan, so the mixture fills the space and then cook for about thirty seconds on each side.
Repeat this twice more.
Mix together the ricotta, 1 tsp cinnamon, honey, pine nuts, and stewed apples.
On each pancake, line 1/3 apple mixture along one side, then roll up the pancake.
