This cake is lovely for afternoon tea dusted with a little sieved icing sugar. Alternatively, it can be served with ice cream or cream as a dessert. Cooked pears or sliced tinned peaches can be substituted for the apples if preferred.

Makes: 8 servings
Ingredients
125g margarine
125g sugar
250g SR flour
1 large egg
2 Granny Smith apples
1 teaspoon vanilla essence
1 teaspoon finely grated lemon peel
1 teaspoon cinnamon
Method
Peel and slice the apples.
Stew the apples until just soft. Drain well.
Beat the margarine and sugar.
Add beaten egg, vanilla essence and grated lemon peel and mix.
Add sifted flour and mix.
Line a greased cake tin with greaseproof paper.
Cover bottom of tin with a bit over half of the cake mixture, pressing flat with clean fingers.
Cover dough with drained apple.
Put rest of cake mixture on top by pressing bits between fingers and arranging on top of apple. Leave small gaps between the pieces as they will spread during baking.
Bake in moderate oven for about 30 minutes or until lightly browned and a skewer inserted comes out clean.
Remove from tin when cool.
Cake may be eaten plain or with a light dusting of icing sugar.
It is especially nice served with ice cream or cream.
