A dollop of cream over this steaming pud would go down a treat.

Ingredients
300g baking apples
200g margarine
100g coconut nectar (or coconut sugar)
150g self-raising flour
1 tsp baking powder
2 eggs
Method
Peel, core, and dice the apples.
Melt the margarine in a frying pan with half the coconut nectar.
Stir in the apples until golden, drain (but retain) the excess margarine, and divide the apples into four ramekins.
Pre-heat the oven to 220 ༠C/ 200 ༠C fan/425 ༠F/7 Gas.
Beat together the flour, eggs, remaining coconut nectar, and melted margarine.
Pour the mixture over the apples.
Bake in the oven for half an hour.
Turn the sponge upside down into a dish to serve.
