These scones are sweet, tart and perfect for dessert or breakfast!
Preparation Time: 20 minutes
Cooking Time: 25 minutes
Makes: 8 scones
Ingredients
2 cups fresh Strawberries
1 cup apple
2.5 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 tbs granulated sugar
3 tbs packed brown sugar
1/2 cup cold butter
1/2 cup buttermilk
Topping
1 tsp granulated Sugar
1 tsp brown Sugar
1 tsp cinnamon
Method
Preheat the oven to 190°.
Rinse and cube apple and strawberries. Cubes should be between 1 and 2 centimetres squared.
TIP: Any kind of apple will do, but if you like tartness to your dessert, as I do, then Granny Smith apples are best.
In a large bowl stir the flour, baking powder, baking soda, salt, granulated sugar and brown sugar
Add butter and blend using a pastry blender until butter and flour mixture are clumped into small crumbs.
Add buttermilk and stir together until dough is a moist ball.
TIP: I sometimes add additional fruit. It can be hard getting so much fruit to stick into the dough. An extra tablespoon or two of buttermilk helps hold it all together.
Move dough ball to a cookie sheet and flatten into a pizza-like circle between 22 and 24 cm round.
Cut the circle into 8 wedges using a floured knife.
Sprinkle the granulated sugar, brown sugar and cinnamon over the dough, then separate the wedges, allowing some room for the scones to grow as they cook through.
Bake for 25 minutes or until a toothpick poked into the centre of the scones comes out dry.
(optional) Once out of the oven, sprinkle icing sugar over the scones.
