Apple Streusel Cake

This is a lovely dessert and a great way to use up leftover apples. It is an adaptation of plum cake, which is a traditional German cake. It tastes delicious served either hot or cold.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 12 servings

Ingredients
½ cup sugar
2 cups plain flour
1 tsp baking powder
1 pinch of salt
¼ cup butter
1 egg, beaten
1 tsp almond extract
Milk
Cinamon for sprinkling

Streusel:
1 cup plain flour
¼ cup sugar
½ cup softened butter

Method
  • Peel and chop the apples into thin quarter slices. Let the apples soak in a bowl of water and vinegar, to stop them from turning brown.
  • Mix the sugar, flour, baking powder, salt, and butter in a mixing bowl. The mixture will be quite dry and crumbly.
  • Add in the beaten egg and almond extract.
  • Mix in enough milk to thicken the cake batter.




  • Spread the mixture thinly into a lightly greased baking tin.
  • Drain and rinse the apple slices, and arrange in rows on top of the cake batter.
  • Lightly dust the apples with cinnamon.



  • For the streusel topping, mix the butter into the flour and sugar until the mixture forms crumbs.
  • Sprinkle over the apple slices until evenly covered.
  • Add dollops of butter on top.
  • Bake in the oven for 180ºC for 20 minutes or until golden.



  • Allow to sit for 5 minutes, then slice into pieces.
  • Enjoy either hot or cold
