Apple Strudel

My grandmother taught my mum the art of making Appelstrudel (traditional Viennese strudel). Needless to say the only apple strudel to pass our family’s lips is this Austrian dish, which my mum mastered many, many years ago.

Unfortunately I missed the memo on learning how to cook this traditional strudel. I know my grandmother would be turning in her grave right now, but none-the-less this version is almost as good as what I grew up with. It’s quick and easy and dare I say a much healthier version.

Not quite the Appelstrudel my grandmother used to make but this healthier version tastes just as decadent.

Preparation Time: 10 minutes
Cooking Time: 10-15 minutes
Serves: 4-6

2 Green apples
½ Cup pine nuts
½ Cup sultanas
½ Cup walnuts
3 Pitted prunes
1 Tablespoon desiccated coconut
1 Puff pastry sheet

The filling is rather simple and uncomplicated - apples, nuts, prunes and sultanas.

Cut the apples into quarters then finely slice each quarter using a mandolin, then finely dice the prunes.

Pre-heat the oven to 170°C.

In a small bowl, combine the sliced apples, prunes, pine nuts, walnuts and sultanas.

Combine all the ingredients and transfer onto one half of the puff pastry sheet.

Transfer all the ingredients onto one half of a thawed sheet of puff pastry then sprinkle the desiccated coconut over the apple mixture. Roll the pastry into a log.

Place the strudel into the pre-heated oven and bake for 10-15 minutes.

Sprinkle some desiccated coconut over the apple mixture just before rolling the strudel into a log.

Just before serving slice the strudel and serve plain or with a large dollop of custard, cream, ice-cream or yoghurt. Enjoy hot or cold.
