Last year we planted lots of tomato seeds and ended up with tons to make lovely
red,
yellow, and
green tomato chutney. This year we only bought a few plants, so are not getting quite as many. I can get just as much chutney out of them though, by bulking it out with apples to make it a sweet and fruitier delight.

Makes: 2.3kg
Ingredients
4 baking apples
3 brown onions
1 clove of garlic
900g tomatoes
100g sultanas
100g raisins
50g currents
350g demerara sugar
5 tsp curry powder
1 tsp mixed spice
900ml malt vinegar
100ml water
Method
Core, peel, and slice the apples.
Heat the apples in a pan with water until tender.
Chop the tomatoes, onions, and garlic, and then add them to the apples.
Stir in the dried fruit, sugar, curry powder, and mixed spice.
Pour in the vinegar, bring the mixture to the boil, and then lower the heat.
Simmer until reduced to a thick consistency with no excess water.
Pour chutney it into warm jars and cover with lids.
