Apple Turnover

This is a healthier version of a traditional apple turnover. Here, you swap pastry for pancakes, making them lighter and lower in fat.

Preparation Time: 1 hour
Cooking Time: 35 minutes
Makes: 5 servings

Ingredients
150g plain white flour
2 cooking apples
40g demerara sugar
65g butter
2 eggs
270ml almond milk
1 lemon

Method



  • Beat together flour, eggs, and milk to make batter and allow it to rest for half an hour.



  • Zest and juice lemon.
  • Peel, core, and chop apple.



  • Fry apples in half the butter, lemon zest, juice, and half the sugar for about ten minutes or until soft.



  • Pour batches of the batter into a greased frying pan to make five pancakes. Cook for about thirty seconds on each side.
  • Pre-heat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.
  • Divide the apple mixture between the pancakes.
  • Fold up the pancakes into square parcels.



  • Put the parcels seam-side down into a buttered baking dish.
  • Melt the remaining butter and brush over the pancakes.



  • Scatter remaining sugar on top.



  • Bake for 20 minutes.
