Apple Turnovers
These apple turnovers are a delightful blend of sweet and tart from the apple, with the puff pastry adding a pleasant crunch. Serve warm with cream or ice cream.

Makes: 4 servings
Ingredients
2 green apples, peeled and sliced
1/3 cup white sugar
1/8 tsp cinnamon
2 tsp corn flour
1 tsp lemon juice
1 egg
1 Tbsp water
2 sheets ready made puff pastry
1 tbsp icing sugar (for dusting)
Method
Preheat oven to 200 degrees
Place sugar, cinnamon, apple,corn flour and lemon juice in a small saucepan. Stir until combined than place over medium heat.
Heat apple mixture until boiling, then reduce heat and simmer for 10 minutes or until apples are soft but still hold their shape. Remove from heat.
Beat egg and water together in a small bowl.
Cut pastry sheets diagonally to form two triangles per sheet. Brush lightly with egg mixture.
Distribute apple mixture evenly between the four pastry triangles.
Fold pastry over to close in apple.
Press sides together using a fork and cut three small holes in the tops of turnovers.
Place turnovers on a tray lined with baking paper and bake for 15 - 20 minutes or until puffy and golden.
Serve warm with cream or ice cream and a dusting of icing sugar.
