Apple Weetbix Dessert Cake

This is lovely as a dessert or as a sweet treat on a plate with a cuppa. There isn't too much margarine in it and you can use a reduced fat variety if you are following a low fat diet. You can add a small handful of sultanas or substitute other fruit such as apricots or peaches for the apple. The topping has a crunchy/cake type consistency


Preparation Time: 10 minutes
Cooking Time: Approximately 35 minutes
Serves: 6 regular sized serves, 4 generous serves

Ingredients
3 medium or 2 large cooking apples
2 weetbix
1 cup SR flour
70g margarine
½ cup sugar
1 tspn mixed spice
2 tblspn milk

Method
  • Pre heat oven to 180C
  • Peel apples, cut into slices and simmer until just cooked. Drain well.
  • Mix finely crushed weetbix, sifted SR flour, sugar and spice in a medium bowl.

  • Weetbix can be crushed with a rolling pin

  • Melt margarine and mix with milk in a small bowl.
  • Add margarine mixture to dry ingredients and mix until combined.

  • Mix until combined.

  • Place apples in greased round pie dish. Spread over base.
  • Spread weetbix mixture on top of apple.


  • Bake at 180C for approximately 35 minutes.
  • Remove from oven and serve or allow to cool and eat cold.

  • Can be eaten hot or cold

  • Serve with a scoop of ice cream or some yoghurt, cream or custard
