Apricot & Walnut Soft-Centered Jam Muffins

Dried apricots and walnuts are great grab and go snacks. This recipe combines the two healthy snacks to create a delicious muffin with a soft jam center that oozes out with the first bite.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 10-12 servings

1/4 cup dried apricots
2 1/4 cup plain flour
3 tsp baking powder
2 cups sugar
2 tsp ground cinnamon
1 egg
1 1/4 cup milk
100 g unsalted butter
1/4 cup apricot jam
1/4 cup walnuts, chopped

Preheat oven to 180 and line a muffin tray with cupcake cases in each hole.
Soak the dried apricots in hot water for 5 minutes.

Finely dice the apricots, set aside.

Beat the butter and sugar together until well combined.

Add in the egg and beat well.

In a large bowl, sift together the flour, baking powder and 1 tsp of ground cinnamon.

Add half the dry ingredients into the butter mixture and stir to combine.

Add half the milk into the mixture and stir to combine.

Add the remaining dry ingredients and milk alternatively until all ingredients are used up.
Combine well.

Add half the diced apricots into the muffin mixture.

Pour the muffin mixture until each case is 1/4 full. Set aside the remaining mixture.

Top each case with a teaspoon of apricot jam in the center.

Cover the cases with the remaining mixture.

Top each muffin with the remaining apricot and sprinkle over with 1 tsp of cinnamon.

Bake for 20 minutes or until a skewer inserted comes out clean.
Transfer to a wire rack and allow to cool slightly.

Serve warm.
