A great little snack to keep in the fridge or freezer - a little bit healthy and a little bit naughty.
Preparation Time: 10mins to mix up ingredients and 15mins to roll into balls
Cooking Time: no cooking required
Makes: approx 50 balls
Ingredients
1 x 400g tin of condensed milk-I used fat reduced
1 cup of dessicated coconut
250g plain biscuits, crushed - I used Arnotts Marie biscuits
4 tbsp of brandy (optional)
1 cup of dried apricots, chopped
3/4 cup of nuts, chopped. I used walnuts but you could also use pecans or something similar.

Method
Crush your biscuits in a food processor - you don't want them too fine so a few small chunky bits make for a nicer texture. If you don't have a food processor, you could put them into a strong plastic bag and hit them gently with a rolling pin to break them up.

Crush biscuits
Mix all the ingredients together in a bowl.

Mixed ingredients
Roll into small balls and roll in extra coconut and leave in the fridge to go firm.
