Apricot Bliss Balls
This delicious and super healthy little snack is great for kids, the work desk snack stash, or just to leave in the fridge and grab whenever the munchies strike! They can be made in a food processor or Thermomix and most ingredients can be substituted to suit your taste or pantry ingredients.

Cooking Time: 0 minutes
Makes: 12 -15 servings depending on the size
Ingredients
1/3 cup dried apricots
1/2 cup pitted dates
1/4 cup unsalted mixed nuts (can use any nuts you like or leave out if making for lunch box snacks.)
2 tbs LSA mix (change to 1/3 cup if leaving out the nuts)
2 tsp coconut oil (shredded coconut will also become an oil when blended)
2 tsp honey
1tbl malt powder (or protein powder in either vanilla or chocolate)
1/4 cup shredded coconut for coating
Method
Stand apricots in a bowl of warm water whilst preparing other ingredients
Grind nuts until fine. (Skip this step if not using nuts)
Drain apricots and add them with all other ingredients to food processor and chop on medium to high speed, until dates and apricots are finely chopped and ingredients are well combined. Should be a sticky texture when done.
Roll into small balls and set aside on plate.
Place shredded coconut in a bowl or in a sandwich bag and place balls in small batches to coat well.
Place in an airtight container and put in fridge to firm up for about 15 mins before serving.
They will keep in fridge for about 3-4 weeks if they don't all get eaten first!
