A crumble is usually made with fresh fruit, but by soaking dried apricots in water, you get a pudding that is just as moist, but with an even more intense flavour.

Makes: 6 servings
Ingredients
250g dried apricots
50g Californian raisins
50g light margarine
10g cardamom pods
1 tsp agave nectar
4 slices wholemeal bread
300ml boiling water
Method
Soak the apricots and cardamom pods in boiling water for two hours.
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Take out the cardamom pods and puree the apricots with the water.
Crumble the bread into breadcrumbs, mix with the raisins, and fry in butter.
Sprinkle the breadcrumbs and raisins over the apricots.
Drizzle agave nectar over the top and bake in the oven.
