Ingredients
200g wholemeal flour
80g margarine
1 egg
1 x 240g tinned apricots in fruit juice
½ tbsp baking powder
4 tbsp honey
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Drain the apricots, but save some of the juice.
Blend the apricots, margarine, honey, egg, and one tablespoon of the drained fruit juice in a food processor.
Fold in the flour and baking powder, then pour into a loaf tin
