Apricot Jam Drops

The classic Jam Drops recipe, Apricot Flavour!
Something to make with the kids on a rainy day.

Preparation Time: 15-25 minutes
Cooking Time: 15-20 minutes
Makes: 24 servings

115g (1/3 cup) strawberry or raspberry jam
190g (1 1/4 cups) self-raising flour
100g (1/2 cup) caster sugar
125g butter, softened (alternatively you can use margarine instead)
1 teaspoon vanilla essence
1 egg

Preheat oven to 180°C.
Line 2 baking trays with non-stick baking paper, or alternatively grease the tray with butter/margarine and dust the tray with flour.
Use a whisk to beat the butter/margarine, sugar and vanilla essence in a medium bowl until pale and creamy.
Add the egg and beat until it is all combined.
Sift the self raising flour over the butter/margarine mixture and stir until it is all combined.
Using your hands (remember to dust them with flour) roll teaspoonfuls of mixture into balls.
Place on the prepared trays, about 5cm apart.
Use a lightly floured finger to make an indentation in the center of each ball.
Spoon 1/2 teaspoon of Apricot Jam into the center of each biscuit.
Bake in preheated oven for 15-20 minutes, or until the biscuits are cooked through and light golden.
Remove biscuits from the oven.
Set aside on trays for 30 minutes to finish cooling.
