Apricot Lamb Chops

Just eight simple ingredients


Looking for a winter warmer recipe for dinner tonight? Try this one out - with only 8 ingredients, it's quick and easy to prepare, inexpensive, deliciously tasty and super warming.

Preparation Time: 25 minutes
Cooking Time: 45 minutes
Makes: 4 - 6 servings

Ingredients
8 forequarter lamb chops
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 green pepper
1 onion
2 crushed garlic cloves (optional)
1 large can apricot halves
2 tablespoons soy sauce

A snaplock bag makes things easier


Method
  • Trim excess fat from chops.
  • Combine flour, salt and pepper and coat chops with flour mixture (I do this in a snaplock bag).
  • Heat oil in frying pan, add chops, brown on both sides then remove from pan.
  • Add peeled and chopped onion,diced and seeded pepper and garlic - brown lightly.
  • Add undrained apricots and soy sauce, stir until mixture begins to boil.
  • Add chops and reduce heat.
  • Simmer, covered, for 25 minutes.
  • Turn chops over and simmer for another 20 minutes or until tender.

  • Served with fluffy mashed potato, cous cous or polenta and steamed green beans.
