The healthy equivalent of flapjacks, these apricot oat fingers are sweet, chewy, nutritious, and have no added sugar.

Ingredients
200g sulphured apricots
200g porridge oats
150g mixed nuts
300ml tea
Method
Soak the apricots in tea for two hours.
Blitz the nuts coarsely in a food processor.
Drain (but retain) the tea from the apricots.
Puree the apricots in a food processor.
Mix the apricots with the nuts, porridge oats, and tea, and heat the mixture in a saucepan until combined.
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.
Press the mixture into two quire baking trays, and bake in the oven.
Slice into 24 fingers, and allow to cool before removing from the tray.
