Apricot Oat Fingers

The healthy equivalent of flapjacks, these apricot oat fingers are sweet, chewy, nutritious, and have no added sugar.

Preparation Time: 2 hours 15 minutes
Cooking Time: 20 minutes
Makes: 24 servings

Ingredients
200g sulphured apricots
200g porridge oats
150g mixed nuts
300ml tea

Method



  • Soak the apricots in tea for two hours.



  • Blitz the nuts coarsely in a food processor.



  • Drain (but retain) the tea from the apricots.



  • Puree the apricots in a food processor.



  • Mix the apricots with the nuts, porridge oats, and tea, and heat the mixture in a saucepan until combined.
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.



  • Press the mixture into two quire baking trays, and bake in the oven.



  • Slice into 24 fingers, and allow to cool before removing from the tray.
