Aromatic Baked Fish

If you are looking for a meal that is visually impressive and tastes sensational then this recipe is for you. This dish is so simple to make and looks beautiful. With lots of aromatic flavours it’s bound to be a winner. It’s great for a stress free informal dinner party or a bountiful family meal.

Makes: 4 servings

Ingredients

1 whole fish (about 500 gm), cleaned and scaled
1 tbsp peanut oil
1 tbsp sesame seeds
2 cm piece ginger, peeled and cut into thin strips
1-2 red chillies, cut into thin strips
1/3 cup soy sauce
1 tbsp white wine vinegar
2 large spring onions, sliced
1 large carrot, sliced
4 pak choy pieces, halved or quartered
salt and pepper, to season
steamed rice, to serve

Create a fabulous meal from scratch using these tasty ingredients.


Method

  • Preheat your oven to 220 degrees Celsius.

  • On the right side up, make 2 cuts into the fleshiest part of the fish. Coat your roasting pan with some of the oil. Then brush the fish with a little oil on both sides and lay it down on the pan. Sprinkle both sides of the fish with the sesame seeds and season with a little salt and pepper. Bake the fish for about 25 minutes or until cooked through and the flesh flakes when tested with a fork.



  • In the meantime, place the soy sauce, vinegar, 2 tablespoons of water, ginger, chilli and half the spring onions into a saucepan. Cook gently, on a low heat until the ginger and chilli are just cooked through and slightly tender.



  • Steam the carrot for a few minutes before adding the pak choy pieces to the steamer. Cook the vegetables until just tender. There should still be a slight crunch to the vegetables when done.



  • Heat the remaining oil in a frying pan on a medium heat. Transfer the pak choy to the pan and sauté for about 2 minutes on both sides, or until the greens are slightly coloured.



  • Lay the cooked fish and vegetables on a bed of rice. Drizzle the sauce over the fish and sprinkle with the remaining spring onions. Serve immediately.
