Traditionally a full English breakfast is greasy, and comes with a heart-attack warning. My artisan version is a healthier, tastier approach to this British classic.

Artisan breakfast for 1
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 1 servings
Ingredients
2 90% pork sausages
A chunk of halloumi cheese
Half a plantain
1 olive bread/rye bread loaf
1 large duck egg
3 cherry tomatoes
2 mushrooms
Black pepper
Method
Place the sausages on a griddle pan/under the grill for 15 minutes, tossing every three minutes to ensure even cooking.
Tear and fry the mushrooms in olive oil for 5 minutes.
Slice the tomatoes in half and fry in the same oil as the mushrooms.
Crack the egg into a pan of boiling water and leave on a simmer for 6 minutes for a poached egg.
Slice the plantain lengthways and fry on a medium heat in the same saucepan as the mushrooms and tomatoes.
Remove the sausages and serve with the cooked ingredients.
Remove the egg with a slotted spoon and crack over some black pepper.
Tear off some of the bread and tuck in.
