Asian Fish Cakes With Chips And Sesame Carrot Salad
This was an enjoyable, inexpensive meal with mainly healthy ingredients.
I baked the par boiled chips with little oil, and they added the finishing touches to a good meal!
Normally I buy one of the expensive fish that is available however for this recipe I used a fish that was on special. I have never used this before (Australian ling), and it was very nice.
Preparation Time: 15 minutes
Cooking Time: 6 minutes plus chips
Makes: 2 servings
Ingredients
½ bunch coriander
300 g Ling fillets, cut into small pieces
½ tsp chilli, or to taste
1 spring onion, finely chopped
1 tbsp ginger
1 heaped tsp cornflour
½ tsp sugar
SESAME CARROT SALAD
1 carrot
1 lebanese cucumber
1 spring onion, sliced
2 tbsp oil
2 tbsp white vinegar
2 tsp sugar
2 tsp sesame seeds, toasted
Method
If making chips, part cook the potatoes in the microwave, and when cool chop to the size you want. Spray some foil and cook in a fairly hot oven for about 30 minutes or until brown.
Cooked chips
Meanwhile, cut the stems away from the leaves of the coriander.
Chop the stems and place in a food processor with the fish fillets and chilli. Process until it is almost a paste.
Put this into a bowl and add the sliced spring onion, ginger and cornflour. Mix the fish sauce and sugar, and add to the fish mixture.
Mix well with your hands and then put in the fridge while you make the salad.
Using a vegetable peeler slice the carrot and cucumber into ribbons. Add the spring onion and the coriander leaves, chopped.
Mix the oil, vinegar and sugar and pour half over the salad and toss.
Heat some oil in a frypan or wok and cook about ¼ cup of the fish mixture in batches, flattening slightly.
Cook for about 2 - 3 minutes each side, until golden, and firm. Drain on paper towel. Repeat with remaining mixture.
Serve these fish cakes with the salad and top with sesame seeds.
Serve the remaining dressing in a small bowl and use for dipping.
