This simple yet extremely delicious salad is a great accompaniment to many dishes or serve as a simple salad with a barbeque. The dressing is what makes this dish, its sweet, salty, acid and warm.
I've paired it with Salt and Pepper Squid and Prawns and the Char Sui Chicken in the
Barbecue Chicken Marinades and it goes beautifully with both.

Preparation Time: 5 minutes
Makes: 2 servings
Ingredients
2 cups rocket
1/4 green capsicum
2 spring onions
1 Portobello mushroom
1/4 cup cashew nuts
DRESSING
2 tbsp. sweet chili sauce
2 tbsp. premium soy sauce
1 - 2 tbsp. rice wine vinegar (to taste)
TO SERVE
2 tbsp. garlic flavoured olive oil
Freshly ground black pepper and sea salt
Method
Thinly slice the spring onion, mushroom and capsicum, chop the cashews and tear the rocket into smaller pieces and place into a bowl.
Place all the dressing ingredients into a bowl and mix to combine.
Place the rocket mix onto a serving bowl or divide amongst dinner plates, drizzle with the oil, then spoon over the dressing. Sprinkle with salt and pepper and serve.
