Asian Style Char Grilled Calamari

The BBQ is one of the most practical and healthy ways to cook, it’s easy, quick and in many ways fool proof – I understand now why the male species of the group have long claimed the BBQ as their culinary domain.

With an unusually warm and humid autumn with the odd crisp night thrown into the mix, I can attest our barbecuing regime has seen an extended repertoire of autumn feasts.

This simple but full of flavour Asian inspired Calamari dish proves that char grilling on a BBQ can be more than just chops and sausages. A playful colour of herbs and spices combine to make a fresh and tasty marinade that allows the delicacy of the calamari to shine through.

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 4 entree serves

1 large squid tube
2 handfuls fresh basil
2 small Birds Eye chilli
2 teaspoons Mirin
2 teaspoons tamari
2 teaspoons extra virgin olive oil
Juice from ½ lime
Pepper to taste

  • Cut the squid into triangles and score with a knife. Set aside in a large dish.

  • Roughly chop the basil and finely dice the birds eye chilli.

  • In a small bowl combine the basil, chilli, mirin, tamari, olive oil, lime juice and pepper, then drizzle the marinade over the squid.

  • Marinate the squid for 15 minutes.

  • Cut and score a squid tube then marinate in a sauce made from basil, chilli, mirin, tamarin, lime juice and olive oil.

  • Preheat the BBQ or frying pan until hot, then add the marinated squid.

  • Cook for 4-5 minutes, then turn the squid over and cook for a further 3-4 minutes.

  • Char Grill the marinated Calamari on a BBQ for 45 minutes on each side.

  • Pile the squid onto a serving plate and squeeze some fresh lime juice over the top of the calamari. Garnish with a handful of marinated olives and serve with steamed rice or a salad.
