AsianStyle Veggies with Peanut Sauce

Warning: this sauce is totally addictive! I've said below that this serves about 4-6 people but I could probably easily eat the whole lot myself because it's so yummy. If you love peanuts, you should enjoy this one!



You can use any veggies that tickle your fancy (or that you have in the fridge) instead of those listed below. You could use bok choy, cabbage, mushrooms, baby corn, etc.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 4-6

Ingredients
Peanut Sauce
1 cup peanut butter
1/4 cup tamari or soy sauce
3 garlic gloves
5cm knob of ginger
Juice of 1/2 lemon
Water, if needed

Veggies
2 tbsp oil
3 brown onions
2 carrots
3 zucchinis
1 capsicum
2 pak choi
2 cups green beans

Method
  • Put all the peanut sauce ingredients in a blender and blend until smooth. Add some water if necessary, until you achieve your desired consistency. Place in a bowl or container in the fridge until required.



  • Prep the veggies: cut the onions in half, then into quarters. Cut the carrots and zucchinis in half or thirds, then each third in half, then slice lengthways.



  • Roughly chop the capsicum, pak choi and green beans.
  • Heat the oil in a large frying pan or wok over high heat. Add the onion and cook for about 5 minutes or until starting to soften.
  • Add the carrots, zucchini, capsicum, pak choi and stir. Cook for about 10 minutes, throwing in the green beans for the final 2-3 minutes.
  • Turn off the heat and stir through the peanut sauce immediately.



  • Serve over noodles or rice.
