Asparagus and Mustard Pastries

Time poor and guests knocking at the door? These quick, delicious, hot hors d'oeuvres are guaranteed to delight guests and steal the limelight at your next party.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 16 Asparagus Pastries

Ingredients
1 Bunch Asparagus (16 Spears)
2 Tablespoons Whole Grain Mustard
2 Tablespoons Grated Cheddar Cheese
2 Filo Pastry Sheets (Slightly Thawed)
1 Teaspoon Extra Virgin Olive Oil
1 Egg (Slightly Beaten)
1 Teaspoon Poppy Seeds

Method
  • Bring a frying pan filled with salted water to the boil.

  • Trim the ends of the asparagus and add to the boiling water. Blanch for 2 minutes.

  • Trim the ends of the asparagus and blanch in salted boiling water.


  • Remove the asparagus, drain and wash under cold running water.

  • Drizzle the extra virgin olive oil, coating the asparagus.

  • Coat the blanched asparagus with a little Extra Virgin Olive Oil.


  • Cut the slightly thawed filo pastry sheets into four squares.

  • Then diagonally cut each filo pastry square in half forming a triangle. You will end up with 16 triangle pieces.

  • Evenly spread the whole grain mustard over the surface of each triangle and top with some grated cheddar cheese.

  • Cut each filo pastry sheet into 4 squares and again into triangles, then spread the surface of each triangle with whole grain mustard.


  • Place an asparagus spear at the widest edge of filo triangle. Roll the pastry enclosing the asparagus.

  • Add grated cheddar cheese on top of each filo triangle.


  • Place the rolled asparagus pastries onto a baking tray.

  • Brush the tops and sides of each pastry with the egg and sprinkle with poppy seeds.

  • Roll each filo pastry enclosing the asparagus, then brush the tops and sides with egg and sprinkle with poppy seeds.


  • Pre-heat an oven to 200 degrees and bake the asparagus pastries for 15 minutes or until the filo pastries have puffed and are crispy and golden brown in colour.

  • Bake the for 15 minutes or until crisp and golden brown in colour.


  • Serve immediately while hot.
