Asparagus Tart
Asparagus is currently in season here, but I must admit it's not my favourite vegetable. However, I did really enjoy this asparagus tart! The creamy sauce gave a tangy flavour that paired perfectly with the asparagus. It is also easy to prepare - a quick spring-time side dish.
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 8 servings
Ingredients
1 sheet frozen puff pastry
6 asparagus spears
1 tbs olive oil
2 tbs wholemeal flour
1 cup oat milk (or milk of choice)
1 tsp dijon mustard
Juice of 1/2 lemon
1/4 tsp sea salt
Method
Preheat the oven to 180C.
Remove the puff pastry from the freezer and place on a greased baking tray.
Chop the woody ends off the asparagus (about 1-2 inches off the bottom).
Slice the asparagus in half lengthways.
In a small saucepan, heat the olive oil for about 20 seconds.
Add the flour and stir to combine, cook for a further 15 seconds.
Gradually add the milk and continue stirring, so the flour paste gradually dissolves and the mixture thickens.
When you have used all the milk and the mixture has thickened, remove from heat and stir through mustard, lemon juice and salt.
Spread the sauce over the pastry, leaving about an inch around the edges. The sauce will be thick.
Arrange the asparagus on top.
Fold over the pastry edges.
Bake for 25 minutes or until the pastry is golden.
Remove from the oven and let cool slightly before serving.
