Asparagus Tart

Asparagus is currently in season here, but I must admit it's not my favourite vegetable. However, I did really enjoy this asparagus tart! The creamy sauce gave a tangy flavour that paired perfectly with the asparagus. It is also easy to prepare - a quick spring-time side dish.



Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 8 servings

Ingredients
1 sheet frozen puff pastry
6 asparagus spears
1 tbs olive oil
2 tbs wholemeal flour
1 cup oat milk (or milk of choice)
1 tsp dijon mustard
Juice of 1/2 lemon
1/4 tsp sea salt

Method
  • Preheat the oven to 180C.
  • Remove the puff pastry from the freezer and place on a greased baking tray.
  • Chop the woody ends off the asparagus (about 1-2 inches off the bottom).

  • Slice the asparagus in half lengthways.

  • In a small saucepan, heat the olive oil for about 20 seconds.
  • Add the flour and stir to combine, cook for a further 15 seconds.

  • Gradually add the milk and continue stirring, so the flour paste gradually dissolves and the mixture thickens.
  • When you have used all the milk and the mixture has thickened, remove from heat and stir through mustard, lemon juice and salt.
  • Spread the sauce over the pastry, leaving about an inch around the edges. The sauce will be thick.

  • Arrange the asparagus on top.
  • Fold over the pastry edges.
  • Bake for 25 minutes or until the pastry is golden.

  • Remove from the oven and let cool slightly before serving.
