Avocado Brownies

Why feel guilty when you can have brownies the healthy way? They still still tastes just as rich and delicious.



As a nutrition student, I am a proud avocado advocate! Monounsaturated fatty acids are essential for your body. These are the same fatty acids found in extra virgin olive oil and they are so good for you. These fatty acids in avocado add to its creaminess, which is why these brownies don't taste healthy at all.

Don't worry, I was just as sceptical when I was baking these, but once you try them, there's no going back.

Preparation Time: 20 minutes
Cooking Time: 25-30 minutes
Makes: 12 pieces

Ingredients
1 avocado, mashed as much as possible!
115 g of dark chocolate, melted
1/3 cup of brown or raw sugar
1/2 tsp of vanilla essence
1 egg
3/8 cup of wholemeal plain flour
1/8 cup of unsweetened cocoa powder
1 1/2 tbsp of extra virgin olive oil or any other equivalent
40g of dark chocolate chopped
1/2 teaspoon baking powder
pinch of salt


Method
  • Preheat oven to 180 degrees celsius. Prepare your square shaped baking tin by spraying it with cooking spray.

  • In a large bowl mix avocado and melted chocolate together.



  • Add the sugar until just combined, then add eggs, vanilla and mix again.



  • Add the cocoa powder, flour, baking powder and salt and mix with a large spoon. It's important not to overmix or it can become dry!

  • Add the oil and stir then fold the chopped chocolate in for final touches- this will become the melted chocolate part in the brownie.

  • Place into the baking tin and bake for 25-30 minutes.

  • Remove and let it cool.
