Avocado Coriander Lime Rice

So beautiful and creamy!

Avocado, lime, rice and coriander is a combo made in heaven. It begins with rice (whatever type you love), which is covered with a creamy avocado, fresh coriander and a zesty lime mixture.

This recipe requires minimal ingredients but creates something completely delicious. This is perfect for lunch or dinner on its own, as an appetizer, or as a side in tacos, burritos, homemade beans, or hundreds of other ways!


Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2-3 servings

1 cups raw rice
1 ripe avocado
Juice of one fresh lime
1/4 cup chopped coriander
1/4 tsp chilli flakes (optional)
Salt and freshly ground black pepper, to taste

Cook your rice, idealy cook rice ahead of time and let it cool.
Pour the cold rice into a large bowl.
Cut your avocado in half, remove the seed and smash the inside.

Stir until well combined. Add in the juice of one lime, chilli flakes, chopped coriander and seasoning to taste.
Eat on its own or enjoy with homemade beans as I have.

NOTE: This can be made with hot rice but I really hate hot avocado so wait for it to cool.
If you don't like chilli flakes swap for cumin.
