Avocado Dessert Creme with Pistachios and Maple Syrup
Avocados are rich in healthy fats, so here is a different use for them!
They are normally eaten with the main meal or in a salad. However in this recipe I have incorporated it as a dessert with cream cheese, making it both healthy and delicious.
Not too sweet, you could vary the sweetness with the amount of maple syrup you use.
Preparation Time: 10 minutes plus 1 hour standing
Cooking Time: 0 minutes
Makes: 2 servings
Ingredients
1 ripe avocado
75 g low fat [link http://reviewclue.com.au/philadelphia-original-spreadable-cream-cheese/ cream cheese]
Juice of ΒΌ orange
4 tbsp maple syrup
2 tbsp pistachio nuts, chopped
Method
Scoop the flesh out of the avocado, and put in a Mixmaster or food processor.
Add the cream cheese, orange juice, and half the maple syrup.
Mix till it is smooth.
Transfer to a dish and put in the fridge for about an hour.
Put the remaining maple syrup on the plates and move the plate round so that the syrup gets spread.
Put the avocado creme mixture on top of this -if you have a piping bag, this will look better if you use it, however I do not so I just spooned it onto the maple syrup.
Garnish with the pistachios, and serve.
This will keep in the fridge and the avocado does not brown as it has other ingredients with it.
