Avocado, Feta and Tomato Salad

I currently have heaps of tomatoes growing in my vegetable patch, so needed something slightly different to use some up with.

I decided on a salad and as I also had an avocado left over, put some feta in it as well. It is a quick easy recipe, ingredients which I usually have in the fridge anyway.

Preparation Time: 15 minutes plus time to chill
Cooking Time: 0 minutes
Serves: 3

10 - 12 small tomatoes
50 g feta cheese, diced
1 medium avocado
Lettuce (optional)

For the dressing
¼ tsp Dijon mustard
½ tbsp red wine vinegar
2 tbsp olive oil
Bit of sugar
Salt and pepper, to taste

Cut up the tomatoes and add the cubed feta along with a bit of pepper.


I had some leftover lettuce so also added this.


Put in the fridge to chill for up to 30 minutes.

For the dressing
Add all the ingredients in a screw top jar, and shake well to combine.


Add the dressing and sliced avocado (dipped in lemon juice to stop it browning) just before serving.

I had this salad with my plum chicken.


This would also make a great lunch for 2 on its own.
