Avocado Filled with Sauteed Green Grapes

I needed an entree for visitors over Christmas and wanted something different.

These two ingredients together WERE different!

They were quite filling and would be good as a main meal on a hot day with a salad.

Preparation Time: 10 minutes
Cooking Time: 3 - 5 minutes
Makes: 2 servings

Ingredients
1 ripe avocado
75 g green seedless grapes
1 tbsp sugar
½ tbsp cornflour
40 g butter
50 ml dry sherry
Fresh lemon juice

Method
  • Halve the avocados and sprinkle with lemon juice to stop them browning.

  • Melt the butter in a pan and add the sherry, sugar and extra lemon juice.

  • Cut the grapes in half and if there are any pips, take them out.

  • When the butter is bubbling, add the grapes and cook for about 3 - 4 minutes.


  • Slowly add the cornflour to this mixture and stir until smooth.

  • Let this mixture cool.

  • Pour the grape mixture over the avocados and serve.


  • To make it look nicer, you could put a thin slice of lemon on the top.
