I needed an entree for visitors over Christmas and wanted something different.
These two ingredients together WERE different!
They were quite filling and would be good as a main meal on a hot day with a salad.
Preparation Time: 10 minutes
Cooking Time: 3 - 5 minutes
Makes: 2 servings
Ingredients
1 ripe avocado
75 g green seedless grapes
1 tbsp sugar
½ tbsp cornflour
40 g butter
50 ml dry sherry
Fresh lemon juice
Method
Halve the avocados and sprinkle with lemon juice to stop them browning.
Melt the butter in a pan and add the sherry, sugar and extra lemon juice.
Cut the grapes in half and if there are any pips, take them out.
When the butter is bubbling, add the grapes and cook for about 3 - 4 minutes.
Slowly add the cornflour to this mixture and stir until smooth.
Pour the grape mixture over the avocados and serve.
To make it look nicer, you could put a thin slice of lemon on the top.
