Avocado Fries with Spicy Tomato Salsa
There is no denying that guacamole is synonymous with Mexican food, so it will come as no surprise the avocado originated in the Central Americas and Mexico. Fortunately for the avocado lovers amongst us, this fruit has morphed into one of the easiest and most prolifically cultivated crops across the world, favouring tropical and Mediterranean climates especially.
Avocado Fries will put a culinary twist on the traditional Mexican palate and can be served with meat, fish, chicken or burgers or served with a salad. Or you can simply serve them as finger food with wine, beer or cocktails for something that will be a truly memorable snack.

Ingredients
1 Firm Avocado
4-5 Tablespoons Organic Quinoa Flour
1 Egg
6-8 Tablespoons Almond Meal
Zest of 1 Lime
Black Pepper
Cumin
Salt
Spicy Tomato Salsa
Method
Pre-heat the oven to 160°C.
Cut the avocados in half and remove the stone. Using your hands, peel the outer skin then cut the avocado into halves and again into quarters (you will end up with 16 wedges). Cut the wedges in half (this is optional) or you can leave the wedges as they are and have larger wedges or fries.
Choose firm avocados for this recipe.
Combine the egg, cumin, lime zest, salt and black pepper in a small bowl and whisk together to make an egg wash.
Fill a zip lock bag or any plastic bag with the Quinoa flour. Place the Avocado Fries 4-5 at a time in the plastic bag and carefully shake the Quinoa flour so each piece of avocado is coated. Repeat with the remaining avocado pieces.
Evenly coat the avocado wedges with Quinoa flour.
Dip the floured avocado pieces into the egg wash and then into a small bowl containing the almond meal.
Line a tray with baking paper and place the Avocado Fries onto the baking paper. Lightly spray the tops of the avocado fries with cooking spray.

Bake the Avocado Fries for approximately 10 minutes or until the fries start to turn a pale golden colour.
Remove the Avocado Fries from the oven and assemble on a serving platter. Serve with freshly squeezed lime-juice and the Spicy Tomato Salsa.
Can be enjoyed hot or cold as finger food or snack and will pair brilliantly with beer, wine or a cocktail.
