This recipe is quick and easy. I’ve also heard that avocados are quite healthy, so that’s always a bonus. Avocado toast is perfect with a glass of fruit juice for breakfast. It also makes a great quick snack. This recipe does require the avocado to be ripe.
Ingredients 1 ripe avocado
2 slices of bread
Salt and Pepper
Cut the avocado in half and take out the stone.
Scoop the avocado fruit into a plate
Using a fork mash this until you have a thick paste. This part of the recipe depends on your preference, if you like a thick paste with more texture then gently mash the avocado leaving whole pieces.
Add juice from 1/3 of a lemon to the mashed avocado. Leave a slice of lemon to drizzle over the toast at the end.
Season with a bit of salt and pepper and mix together.
Lightly toast the slices of bread in a toaster. This is done to stop the bread from going soggy. Any type of bread can be used depending on what you prefer.
Place some foil on a grill tray. Microwave grills can also be used for this recipe.
Spread the avocado mash on the lightly toasted bread slices using a fork.
Grill for 10 minutes or until the toast starts to go golden brown. My grill only has one setting but a medium setting is fine. After 5 minutes regularly check the avocado toasts to make sure they are not burning.
Remove from the grill and squeeze the juice from the remaining lemon slice on to the toast.
Serve and enjoy!
Cheese, olives and tomato
Some great variations are slicing cheese, tomato or olives (or all 3) and placing them on the avocado slices before they are grilled.
