Avocado with Curried Mushroom Crustless Quiche

I know this is an unusual mixture but it turned out very nice and several days later, the avocado has not gone brown.

I would rather have a quiche without a crust as the crust only adds unnecessary calories to a quiche. It can be served hot or cold as a party dish.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 4

Ingredients
200 g mushrooms
45 g butter
1½ tsp curry powder
1 large avocado
3 tbsp spring onions, chopped
3 eggs
175 g thickened cream
3 tbsp dry white wine
1 tbsp tomato sauce

Method

  • Preheat the oven to 180°/160° fan forced.

  • Cut the stalks off the cap mushrooms and slice them thickly.

  • Melt the butter and cook the mushrooms over a high heat for 1 to 2 minutes only, stirring.

  • Add the curry powder and cook again for a few seconds, and add a pinch of salt.


  • Butter the quiche dish and add the mushrooms to the base.

  • Slice the avocado into slices and arrange these over the mushrooms.


  • Put the spring onions evenly over this.

  • Beat the eggs, cream, some salt and pepper, the wine, and the tomato sauce together.

  • Pour this mixture over the top of the avocado.


  • Bake for about 25 minutes or until it is lightly set in the middle of the quiche.

  • Remove from the oven, let sit a few minutes, and then slice in pieces.


  • It is also great cut into squares, and served cold - great as a party dish.

  • I heated it up a day later and ate it with my bacon, banana and apple salad.
