Avocado with Curried Mushroom Crustless Quiche
I know this is an unusual mixture but it turned out very nice and several days later, the avocado has not gone brown.
I would rather have a quiche without a crust as the crust only adds unnecessary calories to a quiche. It can be served hot or cold as a party dish.
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 4
Ingredients
200 g mushrooms
45 g butter
1½ tsp curry powder
1 large avocado
3 tbsp spring onions, chopped
3 eggs
175 g thickened cream
3 tbsp dry white wine
1 tbsp tomato sauce
Method
Preheat the oven to 180°/160° fan forced.
Cut the stalks off the cap mushrooms and slice them thickly.
Melt the butter and cook the mushrooms over a high heat for 1 to 2 minutes only, stirring.
Add the curry powder and cook again for a few seconds, and add a pinch of salt.
Butter the quiche dish and add the mushrooms to the base.
Slice the avocado into slices and arrange these over the mushrooms.
Put the spring onions evenly over this.
Beat the eggs, cream, some salt and pepper, the wine, and the tomato sauce together.
Pour this mixture over the top of the avocado.
Bake for about 25 minutes or until it is lightly set in the middle of the quiche.
Remove from the oven, let sit a few minutes, and then slice in pieces.
It is also great cut into squares, and served cold - great as a party dish.
I heated it up a day later and ate it with my bacon, banana and apple salad.
