Avocado Wraps

These avocado wraps are healthy, filling, and a doddle to make.

Preparation Time: 10 minutes
Cooking Time: 2 minutes
Makes: 2 servings

Ingredients
1 avocado
180g light cream cheese
2 tsp lemon juice
2 tbsp pine nuts
2 (gluten-free) wholemeal wraps

Method



  • Puree the avocado, cream cheese, and lemon juice together in a food processor.



  • Toast the pine nuts under the grill until they are light brown, and then stir into the mixture.



  • Spoon the mixture equally over two wraps, roll them up, and slice in half.
