Baby Bocconcini and Cherry Tomato Mini Skewers

Antipasto in English literally translates to 'before food'.
So I have created these mini skewers that will be a delight on any antipasto platter.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Makes: 12 skewers

12 baby bocconcini cheese pieces
12 cherry tomatoes
2 tablespoons of basil pesto
12 small basil leaves
Pinch of salt

Start by halving the tomatoes and placing them in a bowl.
Season tomatoes with a pinch of salt.
Cut bocconcini pieces in half and place in a separate bowl.
Add pesto to the bocconcini and mix to coat each half piece of cheese.
Now to assemble the skewers. Start by inserting the toothpicks into the centre of the cheese, and then repeating with the tomato.
Continue, but first place a basil leaf, and then another tomato, followed by one final piece of cheese.
Place into a small serving dish and serve with a variety of finger foods.
