Bacon and Broccoli Salad with Cranberries
Broccoli is supposedly a very healthy green vegetable, though I sometimes tire of the same plain taste! So I added several things to this and made a really yummy salad that would go with many main courses, or could even be eaten as a main course.

Makes: 2 servings
Ingredients
About 2 cups broccoli (I used a mixture of broccolini and left over raw broccoli)
Small clove garlic, crushed
2 tbsp low fat mayonnaise (I used half a chipotle one and half ordinary)
2 tbsp sour cream
1 tsp cider vinegar
½ tsp sugar
125 g water chestnuts, rinsed and chopped
2 - 3 shortcut bacon rashers
2 tbsp dried cranberries
Method
Chop up the bacon into small pieces and cook for about ten minutes or to your liking.
Mix the garlic, mayonnaise, sour cream, vinegar and sugar in a large bowl.
Chop the broccoli and add - I also cut the stalks finely and used some of these to give the salad extra crunch.
Add the water chestnuts, bacon, cranberries and some pepper, and stir so the salad is coated.
You can make this ahead of time, and I served it with my salmon fettucine.
