Bacon and Eggs on Toast with Fried Potatoes

This is a quick, easy way to make the best bacon and eggs for that leisurely breakfast.

I have added a potato made into chips to vary it a bit.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 serving

Ingredients
1 large egg
2 - 3 rashers shortcut bacon
1 Kipfler potato
Piece rye bread
Butter

Method
  • Fry the bacon for about 5 minutes, turning once or twice till it begins to brown - I like the bacon very crispy so fried it a bit longer.

  • Meanwhile, if making the potato, microwave it whole for about a minute.

  • Cut the potato into chip shapes of your choice, and add to the pan.


  • Put your toast in the toaster.

  • Add the egg to the pan and cook to your liking or about 2 minutes for a soft yolk.

  • Butter your toast as this adds to the flavour.


  • Put the eggs, bacon and potato on top of the toast, decorate with parsley if desired, and serve.
