Bacon and Onion Rosti Cake

POTATOES - I like almost anything made with potatoes which are so versatile as is the other ingredient in this easy recipe - bacon.

Preparation Time: 15 minutes plus 30 minutes fridge
Cooking Time: 35 minutes
Serves: 2 as a main

Ingredients
About 500 g potatoes, unpeeled
30 g butter
3 - 4 rashers short cut bacon, chopped
½ onion 1 garlic clove, crushed
1 tbsp parsley, chopped
½ tsp oregano
½ tsp thyme leaves
1 - 2 slices cheese (optional)

Method
  • Boil or steam the potatoes until they JUST start to get soft - about 6 - 9 minutes, depending on their size.

  • Rinse in cold water and put in the fridge for at least 30 minutes.

  • Peel potatoes, grate them and put in a bowl.

  • Heat half the butter in a frypan (about 20 cm), and add the onion, bacon and garlic.


  • Cook for about 3 minutes until the onion is soft but not brown.

  • Put this onion mixture in with the potatoes, add the herbs, and mix well.

  • Add a tiny bit of butter to the pan, if needed, and spread the mixture into the pan, press down with a spatula.

  • Cook for about 8 minutes or until a crust forms on the base.

  • Carefully slide this on to a plate, then put another plate on top and invert it.


  • Add the rest of the butter, and slide it back in the pan, thereby having the cooked side up.

  • I then added a slice of cheese on top, but this is optional.


  • Cook for another 6 minutes or so or until the base is crusty.

  • Serve hot, cut in half or in wedges, with a salad of choice, or a meat dish.
