Bacon Broccoli and Potato Frittata

This is an easy, quick, and healthy recipe. You can add as much broccoli as you like, and I used a mixture of frozen florets as well as a small head of broccoli.

I possibly used a bit much as the egg did not cover it all but it was delicious as is!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 3

Ingredients
4 slices bacon, cut into small pieces
1½ cups potatoes, cut into cubes about 1 cm
1 onion, chopped
5 - 6 eggs
½ cup water
¼ tsp pepper
2 cups broccoli florets
¾ cup cheese, grated

Method
  • If you are using fresh broccoli, microwave it for a minute or so.

  • Put the bacon in a frypan and cook over a medium heat for about 5 minutes.

  • Add the cubed potatoes and cook for another five minutes.


  • Add the onion, cover and cook for between 10 and 20 minutes, or until the potato is tender - stirring occasionally.

  • Beat the eggs, add the water and pepper, and stir in the broccoli and ¾ of the cheese.

  • Add this to the frypan with potatoes.


  • Cover and cook until it is set - about 10 minutes.

  • Remove from the heat, sprinkle with the remaining cheese, and cover.

  • Let it stand until the cheese is melted - about 3 minutes, slice and serve.

  • I served it with an avocado and tomato salad.
