This is an easy meal to make and you can use whatever vegetables you like.
I have used broccoli, capsicum and mushrooms. For some extra punch, add some fresh chili when adding the other vegetables.

Makes: 4 servings
Ingredients
About 500 g chicken thigh fillets
1 cup rice
100 g mushrooms
1 onion
150 g broccoli
1 capsicum
½ cup cream
1 tbsp soy sauce
5 - 6 rashers short cut bacon
1 tomato
1 egg (optional)
Method
Cook the chicken by either steaming or frying in a bit of oil. Allow to cool.
Pull the chicken into small, uneven pieces.
Boil the rice in salted water for about 10 minutes. Turn off the heat and allow to stand to absorb more water for about 5 minutes.
Meanwhile cut up the shortcut bacon, and cook till it is brown (about 5 - 10 minutes) - remove from pan.
Chop the onion and cook in the same pan for just a few minutes.
Cut all the other vegetables into small pieces and add these to the onion.
Add the pulled chicken, cream, soy and herbs of your choice to the mixture, and cook for about 15 - 20 minutes or until the chicken is cooked through.
Stir it constantly to avoid sticking.
Break an egg over the top during the last 5 minutes (optional).
Serve - no need to make extra vegetables!
