Bacon Egg and Cheese in a Muffin McMuffin
I'm not sure if I can call this a McMuffin as I tend to think that mine is somehow healtheir than the take away version!
This is the fourth recipe idea that I have made for brunch on a Sunday morning.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 serving
Ingredients
I wholemeal English muffin
1 large egg
1 slice cheese
2 rashers short cut bacon
Butter
Method
Using a fat free fry pan, heat it and then add the cut two pieces of the muffin. Hold them down with a spatula and cook till they go a bit brown - about 2 minutes.
Meanwhile put the bacon on the other side of the fry pan in a little butter.
Take out the toasted muffin pieces and butter liberally on both sides.
When the bacon is almost cooked how you like it, and using an egg ring or a can with the top and bottom off (grease this well on the inside), add the ring, and some butter inside.
Add the egg to the ring.
Cook till it the egg starts to set, and then lift off the egg ring (you may have to cut round the edge), and carefully turn the egg round.
Cook for another minute - do not overcook.
You could put a knife in the egg yolk to break it slightly when you first start to cook it, so that you don't have the messy egg yolk running when you assemble/eat the muffin.
Put the slice of cheese on the bottom part of the muffin, add the egg, and then the bacon.
I then put it back in the pan for about a minute on each side, so that the cheese would slightly melt.
Put the top on the muffin, and it is ready to eat!
If you want to save calories, do not eat the top part of the muffin, use less butter and a low fat cheese!
