Bacon and eggs are a classic combination, and here you can enjoy them in a hearty pie for your dinner.

Ingredients
200g bacon
50g haloumi
100g Cheddar
100g tomatoes
1 onion
6 eggs
1 tbsp chives
275g wholemeal plain flour
135g margarine
2 tbsp water
Method
Rub the margarine into the flour for a breadcrumb consistency, then incorporate one egg and the water to form the dough. Wrap the pastry up in Cling film and leave in the fridge to chill.
Chop the onion, bacon, haloumi and tomatoes and fry in a pan for six minutes.
Beat two eggs gently with a fork and stir in the chives.
Grate the cheese and stir into the egg mixture.
Stir the egg mixture into the bacon mixture.
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/400 ༠F/6 Gas.
Roll out the pastry and use two thirds to line the base of a pie tin.
Create two indents in the filling and crack open an egg into each one.
Use the remaining pastry to cover the pie, then glaze with the remaining egg.
Score the top of the pie and then bake in the oven for 50 minutes.
