Bacon Pineapple and Cheese Stuffed Beef Burgers

There is nothing worse than eating a burger and all the filling falls off. It's just too messy for me. So what I have done is used this cool meat press to make stuffed burgers. This way every bite has bacon, pineapple and cheese.

Cheese and Bacon Stuffed Burgers


Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 3 servings

Ingredients
500 g beef mince
1/2 cup grated three cheese blend
6 tablespoons diced bacon
2 slices of canned pineapple diced
1/4 teaspoon of pepper
1 brown onion diced
2 large tomatoes thinly sliced
1 bunch of baby cos lettuce (or 6 baby cos leaves) washed and dried
1/2 teaspoon of garlic
1/4 cup of whole egg mayonnaise
3 sesame seed bread rolls
3 tablespoons of butter
2 tablespoons of rice bran oil

Method
  • In a large bowl add beef mince and diced onion, season with pepper and mix well to combine.
  • Divide the beef mince into thirds.
  • Next take one portion and halve it.
  • Spray the base and the inside of the lid of the Stufz burger press so that the meat doesn't stick.
  • Place half in the bottom of the Stufz burger device.
  • Place the lid down an press firmly to make rim of the burger pattie making room to add filling in the middle.
  • Pull up the burger press lid. At this stage if it's pressed down firmly enough it will have made a rim and it will be deep enough inside to fill with the bacon, pineapple and cheese.

  • Next add in about 1 -2 tablespoons of bacon (depending how much bacon you like) on top of the beef mince.
  • Next top with one tablespoon of pineapple and then finally some grated cheese about two tablespoons is good.

  • Now place on top the second half of the portion of mince.
  • Using your hands press the edges of the meat around to seal it.
  • Place the top piece of the device in and press down to fully seal the meat together.

  • Stuffed burger pattie fully sealed


  • In a large fry pan add 1 tablespoon of rice bran oil and heat on low.
  • Repeat the process to make a the other two burger patties and when ready place each gently into the oil so it doesn't splash.
  • Cook burgers for one to two minutes on medium heat.
  • Flip the burgers over and cook again for another one to two minutes*
  • Repeat the process for the last burger pattie.
  • Transfer the burgers to a baking tray lined with aluminium foil.
  • Bake the burgers on low heat about 140 degrees celcius fan forced for thirty minutes to cook all the way through.
  • While burgers are cooking prepare the salad.
  • In a small bowl combine the mayonnaise and garlic to make aioli to spread on the buns.
  • Cut each bun in half horizontally and spread a little butter on to each side of the bun and set aside.
  • When all burgers are cooked and the excess oil has been drained start to assemble them to eat.
  • For each bun place down one cos lettuce leaf and then two slices of tomato.
  • When burgers are cooked remove from the oven and set aside for 1-2 minutes to cool slightly.

  • Burger cut in half looks like this. Yum


  • Place each bun with a burger pattie, and finally finish with aioli.
  • Add any extra condiments you like. Tomato sauce and mustard are good on this too.
  • Place the top of the bun on and dig in, you won't be disappointed.
