Bacon soda bread is like a pre-made bacon butty. Quicker to make than your usual loaf, the bicarbonate of soda is helped to activate by a delicious helping of butter cream.

Makes: 1 loaf
Ingredients
450g wholemeal bread flour
50g wheatgerm
½ tsp bicarbonate of soda
½ tsp salt
100g bacon
1 brown onion
300ml buttermilk
100ml water
Method
Pre-heat oven to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Chop onion and bacon, then fry for five minutes.
Mix the onion and bacon together with all of the dry ingredients (leave a bit of bacon to the side).
Gradually pour in the buttermilk and water to form a dough.
Knead for ten minutes, then score and decorate the top with the remaining bacon.
Bake in the oven for 35 minutes.
