An alternative to pork or beef meatballs, these bacon and sweetcorn balls are great for party food, can be taken in a lunchbox to work, or thrown in spaghetti bolognese. They can be served hot or cold, here I used cocktail sticks so that they can be eaten as finger food at a buffet. Each serving is about 28 calories based on the brands I used.
Preparation Time: 15 minutes
Cooking Time: 20 minutes (30 minutes if done in batches)
Makes: 9 servings
Ingredients
140g bacon
100g tinned sweetcorn
2 tsp parsley
Method
Put all the ingredients in a food processor and blend.
Use a teaspoon to scoop out the mixture, and roll into twenty-seven balls.
Fry the balls in a pan for five minutes on either side.
Using nine skewers, pierce three through each.
Cook under the grill for ten minutes, turning them over halfway through.
